Bébianus

The priory owes its name to Bébianus, Roman centurion who received this land in the 1st century in reward for his 25 years dedicated to the war for the expansion of the Roman Empire. It was at this time that the first vine crops appeared in Bébian.

Thereafter it was the Cistercian monks who cultivated the vineyard after the fall of the Roman Empire. They built in 1150 the chapel that can still be admired today.

Matthieu De Lauzun

According to legend, Molière resident of Pézenas from 1646 to 1657 would have tasted and appreciated the wines of the Domaine. Until today the estate passed from hand to hand before acquiring new modern facilities, next to the historic buildings giving way to the restaurant of Matthieu de Lauzun, Michelin-starred chef. Some hotel rooms will complement the offer to offer a unique wine tourism service in the region.
The room, entirely decorated by Matthieu de Lauzun and the renowned architect Raymond Morel, offers a very warm atmosphere, perfect balance between past wine and modernity. Raw materials and the desire to keep alive a secular past give the dining room a unique atmosphere.
No less than a year of work was needed with the help of the best craftsmen in the region to fully rehabilitate the historic buildings into an upscale hotel / restaurant.
